Canning comes first. Each guide names the source it rests on, usually the USDA Complete Guide to Home Canning or a page from the National Center for Home Food Preservation. Poultry and garden guides follow the same habit: land-grant university Extension material first, blogs and forums never as the deciding source.

What we will not do

• Invent a processing time, a pressure or a recipe.
• Claim we tested something when we only read about it.
• Give veterinary or medical advice. We describe what to look for and when to call a professional.
• Recommend a product because someone paid for the mention.
